Pumpkin Bread
3 C sugar 1 C oil 4 beaten eggs 1 can (lb) pumpkin 2/3 C water 3-1/3 C flour 2 t soda 2 t salt 1 t baking powder 1 t nutmeg 1 t allspice 1 t cinnamon 1/2 t cloves walnuts raisins Cream sugar & oil. Add eggs & pumpkin, mix well. Add dry ingredients alternating with water. Pour into 2 greased/floured 9x5 loaf pans. Bake 350, 1-1/2 hrs. Let stand 10 mins. remove from pans to cool.
Zucchini Chocolate Cake
This is from my friend Laurie B. grease & flour 9x13 pan. Oven 350- 40-45 mins. 1 C butter 1-1/3 C sugar 2 eggs 1 t vanilla 1/2 C sour milk 1/4 C Hershey's cocoa 2-1/2 C flour 1.2 t baking powder 1 t soda 1 t salt 2 C grated zucchini walnuts Mix altogether & bake then sprinkle w/choc. chips, let melt and spread, or sprinkle with powdered sugar.
Chinese Chicken Salad
2 chicken breasts,cooked and cubed 1 bag cole slaw mix 4 green onions chopped 2 T sesame seeds 1/2 C almonds Top Ramen noodles -crushed 1 small can mandarin oranges DRESSING: 2 T sugar 3 T cider vinegar 1 pkg flavor mix from Top Ramen 1/2 C olive oil Mix or shake well and sitr into other ingredients. Yum-enjoy

Fort Worden is such a pristine pretty spot on the Puget Sound

I was sick the entire time :(, bad cold and cough but made it to classes and really enjoyed them.

My oldest grandson Tanner celebrates his 16th birthday on January 1, 2008. He is an avid 4 wheeler. He and his dad (my son) spend as much time as they can at the sand dunes. Happy Birthday Tanner have a wonderful day!
